To cook pasta with mussels, you will need:

– 250 grams of pasta (spaghetti, penny or fusilli);
– 300 grams of mussels;
– 1 onion;
– 2 cloves of garlic;
– 2 tablespoons olive oil;
– 1 tablespoon of tomato paste;
– 1 teaspoon dried basil;
– salt and pepper;
– greenery for decoration.

Preparation:

Cook the pasta to the state of “al dente”, according to the instructions on the package, and drain the water.
Clean the mussels from the shells and rinse them under cold water to remove sand and other impurities.
Chop the onion and garlic and fry them in olive oil until golden brown.
Add the mussels to the onion and garlic and fry for a few more minutes to warm up the mussels.
Add tomato paste and dried basil. Stir and fry for a couple more minutes.
Add a little water or broth to make the sauce. Add salt and pepper to taste.

Simmer the mussels under the lid on low heat for about 10-15 minutes, until they become soft.

Mix the finished pasta with the mussel sauce and mix gently.
Serve the pasta hot, garnished with herbs.
